1 lb of our very popular ground sirloin ground with the fat cap on so it is a little higher in fat that the very trimmed and lean sirloin. If you’re looking for a really low, fat ground meat, your best bet would be ground buffalo, which we do have.  Please remember the fat in animals and ancestral Meats is very good for you and has a lot of vitamins and amino acids that our body needs so don’t be afraid of the fat. It gives lots of texture and flavor. 
 Our beef comes from happy, pasture-raised cattle raised in the beautiful rolling hills of Santa Margarita near Atascadero, California.
Our cattle are 100% grass-fed and grass-finished, grazing on pasture throughout their lives—never grain-finished. We believe in keeping things simple and raising cattle the way nature intended.
