Over the years, many of you have asked if we could offer smaller custom packages for those cooking just for themselves, for two people, or for someone on a special diet. I’m happy to finally offer this service.
I actually started doing this for myself while following the carnivore diet. Having smaller portions ready in the freezer makes it incredibly convenient to pull something out and cook quickly. Some of the little squares of ground meat, for example, defrost fast and turn into a simple burger in just minutes.
Most of these portions are about 4–6 ounces, which makes them perfect for single servings.
Because each package is carefully portioned, labeled, and vacuum sealed, these custom packs do cost a bit more due to the extra time and labor involved.
Custom Package Guidelines
• Minimum order: 20 pounds total
• All items must be ordered in 5-pound increments
• Each 5-pound selection will be broken down into the portion size you request. But no less that 1/4 lb.
• We recommend ¼-lb or ½-lb packages for most items
For example, when I prepare my own carnivore diet packages:
• 5 lbs grass-fed ground brisket
Portioned into ¼-lb packs = about 20 individual servings
• 5 lbs pasture-raised chicken breast (butterflied)
One breast per package = about 20 packs
• 5 lbs pasture-raised bacon
Packed into ¼-lb portions (cut in half) = about 2½–3 slices per pack
• 5 lbs boneless pork chops
One pork chop per package = about 20 packs
• Baseball steaks average ½ lb each, so 5 lbs = about 10 steaks
Items that cannot be portioned smaller
Some cuts simply don’t make sense to portion into very small sizes, including:
• Bone-in ribeyes
• Porterhouse steaks
• Large roasts or slow-cook cuts
For items like roasts, it’s much better to cook the full roast and portion it yourself afterward.
How Ordering Works

3.I will send you a price quote for your custom order
Because of the extra time involved in making this, we would need two weeks notice to prepare this.
One custom order per person or Family per month. 
Because of the extra labor involved with portioning, labeling, and vacuum sealing, the price is approximately $4 more per pound.
Example:
Our grass-fed ground brisket is normally $18/lb.
Custom portioned, it becomes $22/lb.
For a 5-lb batch, that works out to only about $0.50 more per individual package — making it an easy and convenient way to keep ready-to-cook portions in your freezer.
