This is the best part of the ribeye, considered the cap of the ribeye. The most tender part,  this is $55 a pound and you get two of them in approximate 1/2 lb packages. 
Please do not come as a roll, but many people roll it up and tie it with Butcher string for presentation they come as a strip  Price and total weight will be updated on your invoice.
